Mrs Mac will be sadly missed by the staff, families & children at the Preschool & we all wish her well in her new adventures. PAY NOW AND WALK RIGHT IN LATER This year Canowindra residents can pre-purchase entry to Night Markets and Balloon Glow from the Newsagency: $5 per adult; $10 per family (2 adults + kids). This will save lining up at the gates. The Canowindra Challenge Committee have made a number of changes since last year based on feedback from completed surveys. Surveys will be available again this year from the gate, an information table and handed out on the night, and also from local shops during the following week. Your ideas and suggestions are valuable to improve the balloon events year to year, so make sure you grab a questionnaire and fill it our honestly. Crowds are expected to increase from last year, so get to the Sports Ground early there will be a wide variety of stalls and plenty of action. This years fundraising recipients are the Read triplets, so bring a gold coin or two to toss into the bucket. Stay for the Python's rugby match immediately after the balloon glow and cheer them on to victory.

To the editor...
While I commend council for funding a new garden, landscaping, sculpture, etc of the area immediately in front of & around the corner of the Services Club to the tune of $37,800, WHO will maintain this area. I would have thought it was the Club's area to look after, my husband & I have to beautify & maintain our nature strip. The park across the road is lacking in maintenance with Council employees unable to keep up with the weeds, etc. Not enough time allocated for this purpose. The Garden Club have been approached to help in this area. I really believe gardens, parks, etc are COUNCIL responsibility. Morris Park in Rodd Street is also sadly in need of maintenance. Have any of the councillors walked through there in the past 6-12 months? The paths are all overgrown with grass, the only area that looks good is where the Canowindra Garden Club maintains. The lawns (with no thanks to Council, except for the mowing) are nice & green thanks to Mother Nature. This park used to be a showpiece of Canowindra & this year will be 80 years old in August. With maintenance & TLC it could once again be what the Boree Shire had in mind in 1932. I (along with many others) think our money should & could be spent on what we already have not a new garden that doesn't have any plans, as far as I understand, for maintenance. OPEN GARDEN DAY Autumn is a wonderful time of year with warm days and cool nights. It is also a perfect time for gardens to look their best before preparing for Winter, and six generous households are giving you the opportunity to appreciate their hard work. On Sunday 15 April the Canowindra Garden Club are holding their Open Garden Day, where six gardens in town will be opened to the public between 10am to 4pm at a cost of $10 for all six gardens. Payment will be taken at the Primary School garden, where visitors will receive a map with directions which will be stamped at each garden viewed. The gardens open will be: The Canowindra Primary School (one of Sally Bourne's designs); Restaurant open for dinner - book now! Banoffee Pie 2 x 395g cans of Top n' Fill Caramel* 180g unsalted butter, chopped 375g digestive biscuits 60ml thickened cream Vanilla essence 75g icing sugar, sifted 4 bananas 30g dark chocolate, finely grated Melt butter in a small saucepan then cool slightly. Crush biscuits into fine crumbs, add butter & combine. Press crumb mixture over base of a greased 28cm loose based tin, refrigerate for 30 mins. Spoon caramel evenly over biscuit base & refrigerate overnight until firm. Whisk cream, vanilla & sugar to stiff peaks. Cut bananas into thin slices. Remove pie from tin & place on a plate. Spoon half the whipped cream over the caramel filling, then place bananas in an overlapping circle working from the outside in. Top with remaining cream & sprinkle with grated chocolate. Cut into slices with a hot dry knife and serve immediately.

*you can use sweetened condensed milk that has been caramelised by boiling for 2 hours, just make sure the pot doesn't boil dry...trust me, it's not fun to clean up!

EXERCISE FOR ALL Tai Chi was originally developed as a Chinese martial art, it has been practiced for general health and fitness purposes since the 16th Century. The essential principles of Tai Chi include the mind integrating with the body; fluidity of movement; control of breathing; and mental concentration. Health benefits derived from Tai Chi include improved fitness, increased flexibility and muscle strength, alleviates stress, improved balance, improved posture, helps to prevent falls, promotes inner peace and tranquillity. Cheryl Shirvington and Sandra Nicholson from Forbes are qualified and experienced Tai Chi for Heath and Community Instructors and have held classes in Canowindra for the past five years. With 12 loyal students over this time, Cheryl and Sandra are now offering a completely new form called Tai Chi Fan in which beginners are welcome to participate. It is not necessary to have previous experience to join these classes. Classes will be held weekly Tuesdays 5:30-6:30pm at the Canowindra Primary School Hall from 24 April to 26 June 2012. Classes are scheduled to fit in with school terms, so that family holidays are not disrupted and lessons aren't missed. The cost is $10 per class over 10 weeks, payable in advance to assist in motivating you to continue each week. Fans can be purchased from the instructors. Anyone regardless of age or level of fitness can practice and benefit from Tai Chi. Loose, comfortable clothing and flat shoes should be worn to classes. A few important developments have happened since the last article in the Phoenix: specialised chairs similar to the 'Snap Dragon' chairs that were being considered can possibly be sourced locally. This option would mean the government could partly pay for them and maintain them (still leaving about $30k gap). We could be closer to our goal than we thought. The final decision as to what chair to go with for each child is yet to be made - as they all have different requirements - but one bonus of local sourcing is the reduced ongoing maintenance cost. The Reads are very much looking forward to this Saturday's Balloon Glow event in Canowindra, where a collection will be taken up on their behalf. Volunteers to assist in this collection are desperately being sought. Jemimah Read is thankful that the triplets were chosen to be recipients of this local collection, and wishes to thank the community for all the goodwill and support they have received. PAY NOW AND WALK RIGHT IN LATER This year Canowindra residents can pre-purchase entry to Night Markets and Balloon Glow from the Newsagency: $5 per adult; $10 per family (2 adults + kids). This will save lining up at the gates. The Canowindra Challenge Committee have made a number of changes since last year based on feedback from completed surveys. Surveys will be available again this year from the gate, an information table and handed out on the night, and also from local shops during the following week. Your ideas and suggestions are valuable to improve the balloon events year to year, so make sure you grab a questionnaire and fill it our honestly. Crowds are expected to increase from last year, so get to the Sports Ground early there will be a wide variety of stalls and plenty of action. This years fundraising recipients are the Read triplets, so bring a gold coin or two to toss into the bucket. Stay for the Python's rugby match immediately after the balloon glow and cheer them on to victory.

To the editor...
While I commend council for funding a new garden, landscaping, sculpture, etc of the area immediately in front of & around the corner of the Services Club to the tune of $37,800, WHO will maintain this area. I would have thought it was the Club's area to look after, my husband & I have to beautify & maintain our nature strip. The park across the road is lacking in maintenance with Council employees unable to keep up with the weeds, etc. Not enough time allocated for this purpose. The Garden Club have been approached to help in this area. I really believe gardens, parks, etc are COUNCIL responsibility. Morris Park in Rodd Street is also sadly in need of maintenance. Have any of the councillors walked through there in the past 6-12 months? The paths are all overgrown with grass, the only area that looks good is where the Canowindra Garden Club maintains. The lawns (with no thanks to Council, except for the mowing) are nice & green thanks to Mother Nature. This park used to be a showpiece of Canowindra & this year will be 80 years old in August. With maintenance & TLC it could once again be what the Boree Shire had in mind in 1932. I (along with many others) think our money should & could be spent on what we already have not a new garden that doesn't have any plans, as far as I understand, for maintenance. On Sunday 15 April the Canowindra Garden Club are holding their Open Garden Day, where six gardens in town will be opened to the public between 10am to 4pm at a cost of $10 for all six gardens. Payment will be taken at the Primary School garden, where visitors will receive a map with directions which will be stamped at each garden viewed. Banoffee Pie 2 x 395g cans of Top n' Fill Caramel* 180g unsalted butter, chopped 375g digestive biscuits 60ml thickened cream Vanilla essence 75g icing sugar, sifted 4 bananas 30g dark chocolate, finely grated Melt butter in a small saucepan then cool slightly. Crush biscuits into fine crumbs, add butter & combine. Press crumb mixture over base of a greased 28cm loose based tin, refrigerate for 30 mins. Spoon caramel evenly over biscuit base & refrigerate overnight until firm. Whisk cream, vanilla & sugar to stiff peaks. Cut bananas into thin slices. Remove pie from tin & place on a plate. Spoon half the whipped cream over the caramel filling, then place bananas in an overlapping circle working from the outside in. Top with remaining cream & sprinkle with grated chocolate. Cut into slices with a hot dry knife and serve immediately.

*you can use sweetened condensed milk that has been caramelised by boiling for 2 hours, just make sure the pot doesn't boil dry...trust me, it's not fun to clean up!

EXERCISE FOR ALL Tai Chi was originally developed as a Chinese martial art, it has been practiced for general health and fitness purposes since the 16th Century. The essential principles of Tai Chi include the mind integrating with the body; fluidity of movement; control of breathing; and mental concentration. Health benefits derived from Tai Chi include improved fitness, increased flexibility and muscle strength, alleviates stress, improved balance, improved posture, helps to prevent falls, promotes inner peace and tranquillity. Cheryl Shirvington and Sandra Nicholson from Forbes are qualified and experienced Tai Chi for Heath and Community Instructors and have held classes in Canowindra for the past five years. With 12 loyal students over this time, Cheryl and Sandra are now offering a completely new form called Tai Chi Fan in which beginners are welcome to participate. It is not necessary to have previous experience to join these classes. Classes will be held weekly Tuesdays 5:30-6:30pm at the Canowindra Primary School Hall from 24 April to 26 June 2012. Classes are scheduled to fit in with school terms, so that family holidays are not disrupted and lessons aren't missed. The cost is $10 per class over 10 weeks, payable in advance to assist in motivating you to continue each week. Fans can be purchased from the instructors. Anyone regardless of age or level of fitness can practice and benefit from Tai Chi. Loose, comfortable clothing and flat shoes should be worn to classes. A few important developments have happened since the last article in the Phoenix: specialised chairs similar to the 'Snap Dragon' chairs that were being considered can possibly be sourced locally. This option would mean the government could partly pay for them and maintain them (still leaving about $30k gap). We could be closer to our goal than we thought. The final decision as to what chair to go with for each child is yet to be made - as they all have different requirements - but one bonus of local sourcing is the reduced ongoing maintenance cost. The Reads are very much looking forward to this Saturday's Balloon Glow event in Canowindra, where a collection will be taken up on their behalf. Volunteers to assist in this collection are desperately being sought. Jemimah Read is thankful that the triplets were chosen to be recipients of this local collection, and wishes to thank the community for all the goodwill and support they have received.
